Doesn't the dealer have to demonstrate that they suffered a loss of £300 which is the deposit money in order to be able to keep the money?

No. OP has entered a contract, of which it states the deposit is non refundable and OP has broken the contract.

It does not matter what the dealer puts in their T&Cs as legislation would over write any relevant clauses. If there is any legislation to the contrary it will over write the T&Cs.

An extreme measure would be to take delivery of the vehicle, find a fault and reject it under the 30 day short term. Then they would have no argument.

A risky proposition, there could be nothing wrong with it that allows the OP to reject it!
