Am I correct in my interpretation of this....

'I calculate that you have taken £XXXXX plus £XXX which you have charged me in overdraft interest for the sum which you have taken.'

... on my husbands account, which has an overdraft, he can claim back any overdraft interest?

I have looked in the FAQs but couldn't see anything about this.

If I have missed it please point me in the right direction.

Many thanks as always

He can recove his penalties plus any interest which he was charged on them if the penalties incurred interest because he was in overdraft. So if the penalties are unlawful then the interest charged on them is unlwaful too. However, you are not actually charging the bank interest. You are recovering interest charges.
