First off welcome,

as long as you have the account numbers there is no difference between claiming an account thats active and one that is closed ('cept they can't close an account that has been closed already )

Take your time to read up on all theinformation on the site, couple of useful linkd:

When you are comfortable with the process, start your own threads in the relevant bank forum as this will let you record your progress and also allow people who are in or have been throught the same process to help you out.

For HSBC info, if you have an account number/sortcode you can use the Subject Acces Request (Data protection Letter) in the templates folder, however the same letter (ammended to ask for all information they hold on you as an individual) can be used if you dont have the numbers, but you will have to provide proof of identity, ie address and copy of passport, that sort of thing.
