M&S have lost my credit card application form when I took out a card with them some years back (when they were a chargecard). Does that mean that my debt is unenforceable?

It may be unenforceable until they find the application form. The absence of an application form is not the only evidence required to show that you agreed to use a financial product.
You should not view the absence of the application form as a means of avoiding to pay a legitimate debt.
