Several of the entries on what appears to be the activity log have been obscured with a marker pen so I can't read them.
Surely this wouldn't be allowed- the data is still obviously on their computer system, and they're supposed to show me this under the Data Protection Act?
They can't just stop me from seeing certain bits can they?

No, they can't obliterate\hide\vandalise \ data.
You should write to them asking for unadulterated documents and caution them that you will take court action for non-compliance of the Data Protection Act 1998 section 7 by giving them 7 days notice.
