Default Interest Advice Wanted

Hi, just about to get into all this properly and could really do with a bit of advice. I have just recieved all my statements, however they only go back to Aug 01 not March 01 as requested. Can any one let me know the quickest way to chase these up? Should I write, phone or email and who? Is this the first of many delaying tactics?
But my biggest confusion is regarding calculating interest. I have put all the charges into the Excell complex bank charges calc sheet (England) and cannot decide what is the best thing to do re interest. I have read the guidance and several threads but am still unsure. I understand I cannot claim the 8% until court proceedings begin but should I change the 8% (on the spreadsheet) to 29.8% and claim their interest rate on all my charges? This does increase the claimed amount by quite an impressive amount. Am I right in understanding that this means I do not then add 8% to any court claim? It's great to have this resource available, I'm really grateful to you all.
