Well folks, it was an interesting experience at court.

The judge found the conservatory company in breach of contract. He believed me not the company director!

But he ordered that I pay the bill less 10%, (having already paid 70%) less the cost of building steps. I've got to pay costs though I had hoped for a bigger reduction in the bill but at least I won.

Thanks so much to everyone who helped me, particularly the poster who emailed me a defence I could adapt.

so what did the judge say when u pointed out thy had failed to provide the blinds u had paid for?

The judge said they had to come and backfill the foundations. I asked about the blinds and he said because the company hadn't cashed the cheque that it was between me and them so I suspect I won't be getting them

In that case stop the cheque & refuse to reissue until they provide them otherwise you will deduct the cost

How much did you end up paying them in the end, including costs?

I bet you that sum did not cover the cost they spent on their lawyers.

I basically got 10% off the invoice (had hoped for more) plus the cost of installing steps, but I had to pay costs. Still it was the principle that was important. I bet you're right about the cost of their solicitor, they should have just given in gracefully in the beginning and showed some customer service Hope they learn from it!
