That will work...at least it will work eventually! Barclaycard definitely the worst at getting S.A.R - (Subject Access Request) data out

Unfortunately Royal Mail cannot give me proof of delivery or tell me when it was delivered because it went missing in their system somewhere, however I know that they have received my request because I got an acknowledgement from Barclaycard dated 19th February telling me that copies of my statements have been requested and will be sent to me with 40 days. So in the absence of any information from Royal Mail I will have to count 40 days from 19th February which means they have until 31st March to supply the information.

No, stick to your deadlines! Large organisations (like Barclaycard) blanket-sign for mail which is why Royal Mail can't tell you if and when your letter got there. There are template letters for non-compliance so when the 40 days are up (according to your reckoning), if they still haven't come up with the info, send them a non-compliance letter!

As long as you have proof of posting, the fact the Royal Mail cannot prove when it was delivered means nothing.
Count two days from your proof of posting to allow time for your letter to be delivered, then take the 40 calendar days from there.

Barclaycard are trying to tell me my letter didn't get to them until 23 days after I posted it - am I adding those 23 days to my 40?

Yeah right.
